The grapes underwent a gentle pressing, extracting only the free run juice. Approximately 50% of the wine was matured in oak barrels on lees for around 9 months. The fermentation process involved a partial use of indigenous yeasts in both new and seasoned oak barrels. Monthly stirring of the lees continued until winter. To preserve its freshness and natural acidity, no malolactic fermentation took place.
